Description

For more than twenty years, the food editors and chefs in the kitchens of Martha Stewart Living have been producing bestselling cookbooks, including Meatless, Everyday Food: Light, Power Foods, and Martha Stewart’s Cooking School . Martha Stewart is America’s most trusted lifestyle expert and teacher and the author of more than eighty books on cooking, entertaining, crafts, homekeeping, gardens, weddings, and decorating. Excerpt. © Reprinted by permission. All rights reserved. IntroductionMost of us know that the way we eat is central to our well-being. But we may not always know exactly what ingredients to buy or meals to plan for the most satisfying, delicious, and healthful results. This book will show you how easy it can be: Start with fresh produce, whole grains, and lean proteins; prepare them simply; and take the time to share and enjoy them. This old-fashioned approach to food has a modern name—eating clean. It means making meals from scratch, whether a workday breakfast for one or a weeknight dinner for four. It means making your own snacks instead of relying on anything from a package. And it can also mean enjoying dessert (see Golden Rule 11: Maintain a Healthy Perspective, page 34)! Just as important, eating clean means focusing on every aspect of our meals—turning away from our screens and devices and avoiding other distractions, so we can savor the process of cooking and eating.Perhaps you’re already eating this way, or maybe these ideas are new to you. Either way, there is plenty to discover here. You’ll find excellent recipes as well as the very latest advice from reliable professionals, including nutritionist Kathie Madonna Swift, who contributed her knowledge and expertise to this project. I’m still exploring and evolving and looking for new ways to appreciate clean, whole food, and I hope you’ll be inspired to do the same.Martha StewartPart Onexa0ResetGET A CLEAN STARTWhatever inspired you to pickup this book—a resolutionto eat better, a desire to wipe the slate clean with a whole body detox, or a wish to boost your energy level—you have just taken the first step toward achieving that goal. This book is designed for anyone wanting to hit the reset button and gain a more rewarding, and pleasurable, approach to food.Food plays a central role in our lives. On the most basic level, it feeds our hunger and keeps us alive. But it also functions on social and emotional levels, so to fully address nutrition you need to consider, from all angles, what you eat. Focusing on whole, unprocessed foods helps your body prevent and fight diseases and increases your energy levels. This means eating fresh fruits and vegetables, beans and other legumes, whole grains and whole-grain pasta, nuts and seeds, and modest amounts of lean proteins, including fish, eggs, chicken, and tofu. And yes, even the occasional dessert.xa0As you evaluate what you eat, you should also consider your relationship to food, in terms of how you plan your meals, how you shop, how you prepare food, and how you actually eat it. In our grab-and-go lifestyle, food can become mere fuel to get us through the day, rather than providing us an opportunity to slow down, switch gears, eliminate distractions, and relish the moment.HOW TO USE THIS BOOK“Know Your Nutrients” on page 36 lists foods that are the best sources of antioxidants and antiinfl ammatory, detoxifying, and digestive properties. Having a wellstocked pantry is an essential fi rst step, and we’ve covered the basics— whole grains, legumes, healthy fats, and fl avor enhancers—in the “Restock Your Pantry” section starting on page 46. Then, we encourage you to clean the slate with one of thexa0action plans (designed for either three days or twenty-one days) outlined on pages 62 to 69. Or you can just start cooking from the wealth of delicious recipes in the second part of this book. But before you do anything else, read the “Golden Rules for Eating Clean” on the following pages, and remember that the goal is a healthy, whole, wonderful appreciation of food, not deprivation.xa0ABOUT THE RECIPES In keeping with widely accepted ideals of “eating clean,” none of the recipes in this book contains any butter, refi ned sugar, all-purpose fl our, or red meat. Honey and other natural sweeteners appear, as do whole-wheat fl our and pasta, and dairy products; full-fat dairy is the most minimally processed, but you can use reduced-fat varieties if you prefer. Look for the icons listed below on each recipe page; these are indicated by colored dots in the Action Plan menus and on the juice and smoothie recipes in the “Reboot” chapter.

Great results within couple weeks! We love it!

I had this book have a year and I thought would be hard to do. But one day I decided to learn more about eating clean and started the program. My husband accepted doing with me. It's good if you can do with someone, the recipies are for two or more servings. The first 3 days of detoxing was hard. I didn't like what I was eating but I ate because it was only 3 days. I saw results already after the detox. I had less craving for sweets, less swollen and lost 2lb. Than we started the weekly program. After the second week I have lost total 14lb and my husband 10lb. We feel great, the recipies are easy, fast to do and delicious. We decided to have one day off per week. To eat that chocolate we want or that day you have dinner in a friends house. But we keep on diet in 2 of the 3 meals of that day. So it's not so bad. We look forward to continue the book, so many recipies!
One good thing is that they repeat recipies in the week program because you don't use all the ingredients to make one time, so you don't waist food.
P.s. I'm sorry if have any errors on my writing. English is my second language. -Andi

Another winner by Martha Stewart

I received this book as a Christmas gift just recently. I did not request this book to follow a specific meal plan, but I am very happy with the recipes featured in the book and the ones I have tried so far. They are beautifully photographed and specify complete nutritional information, so the reader can easily convert the recipes to Weight Watcher points if he/she wishes.

Martha Stewart is fastidious about testing her recipes, so I have never been disappointed with her cookbooks, and I look forward to having success with this one as well. Everything is very healthy, beautifully presented and so far has been delicious. I would definitely recommend this book to use for your daily meals or for meals you are preparing for company.

Hit the reset button and enjoy clean eating

“Clean Slate” (from the editors of Martha Stewart Living) is part guide, part cookbook that emphasizes eating clean, whole, unprocessed foods (mostly plant-based), including detox juices and two different “action plans” (a 3-day “jump start” plan and a three-week detox diet). The first 70 pages or so include 11 golden rules, from “practice mindful eating” (Golden Rule No. 3) to “maintain a healthy perspective” (Golden Rule No. 11).

Along the way, you’ll learn about good fats (avocado, cold-water fish, nuts), umami-rich flavor enhancers (which lean strongly towards Asian flavors such as miso, nori, and fish sauce), detoxifiers and inflammation fighters, and tips and tricks on incorporating more physical activity, smart shopping, and finding inner balance. The included sample menus are color-coded to show vegan, dairy-free, nut-free and gluten-free recipes at a glance, but my only concern with the sample menus is that the calorie count seems extremely low (each meal only features one recipe and no sides). Basic recipes for stock, harissa, almond milk, etc. are included in the back.

The recipes feature simple prep and relatively few ingredients, making them easy to assemble and enjoy. I loved the breakfast options like coconut breakfast pudding with sautéed nectarines, honey-caramelized figs with yogurt, crostini with fresh ricotta, cherries, and lemon zest, and breakfast vegetable-miso soup with chickpeas. A large variety of juices and smoothies are also included, along with their respective properties (anti-inflammatory, detoxifying, energizing, hydrating, etc.). There’s a very strong Asian influence with the dashi-poached sweet potatoes and greens ad buckwheat noodles, bok choy, and sweet potatoes and miso-lime broth and the black sea bass with barley, shiitake, and edamame salad, as well as some Middle-Eastern inspired gems like bulgur with pomegranate seeds, a North African chicken-chickpea stew, and Moroccan steamed salmon with quinoa and carrots. There are also Latin- and Mediterranean-inspired dishes, so every member of your family should find something to enjoy.

Easy, healthy snacks such as trail mix, roasted edamame with cranberries, sweet potato chips, kale chips, and dried fruit and nut bites are great for school lunches or quick snacks on the go. Several lighter desserts and drinks are also included. Each recipe includes calories, fat, cholesterol, carbs, protein and fiber, although the print is a bit small and it doesn’t jump out at first glance. A thorough color-coded recipe index allows you to quickly plan a menu around dietary needs or plan out weekly menus. There are full-color, full-page photographs for nearly every recipe.

Nearly all of the included recipes appealed to me (I frequently cook light Japanese-inspired fish and rice dishes), and I loved the whole grain recipes in particular as I am always looking for ways to jazz up whole grains (the farro and roasted sweet potato salad and quinoa salad with zucchini, mint and pistachios were standouts). Pescetarians will find many great fish dishes, and vegetarians will enjoy the many roasted vegetable salads and variations, although there are few vegan main-course dishes. I found this more valuable for the recipes than the “detox” sample menus, but your mileage may vary. Overall, “Clean Slate” offered many fantastic new recipes to add to my repertoire.

You'll Starve On This.

I'm always drawn to anything with Martha Stewart's name on it. I have found that when it comes to recipes, hers (and Julia Child's) are the best. They are tried and true, and she is a superb teacher. However, the nutrition plan in this cookbook is ridiculous. The 3 day detox will have you eating 504 calories for the entire day. After that, a 21 day plan goes like this: A sample day from week 1 is 393 calories a day, a day in week 2 is 932 calories, and a day in week 3 is 892. For the whole day. Each week you are encouraged to get moving, do cardio, strength train. The recipes are like the ones found in countless other new cookbooks that advocate the use of pumpkin seeds, flaxseeds, kale, farro, shiitake mushrooms, bok choy, miso, edamame and so on.

The usual suspects and some new dishes

This cookbook is one of the best I have ever owned. It's clear, consice, and easy to follow.

The vast majority of dishes are accompanied by clear photos, so you can at first glance decide if your in the mood for it.

All the details are contained for each dish as well, not just ingredients like some other books, but times, step, and helpful little tips and tricks (like fold instead of kneed).

My favorite part of the book is the high health level of each dish. The foods called out for are unprocessed and low in fat/sugar.

There are however a lot of recipes youd expect: lemon chicken, veggie stir fry, fruit salad, etc. Which is why I removed a star. However, there's loads more I haven't tried all in one easy to follow place.

Overall I say it's a safe bet. While these may not all be brand new dishes, they are all good for you and presented in an easy way to follow, with pictures to help along the way. You won't regret this purchase!

Wanted to Love...

I really wanted to love this book since I try to eat whole foods and I have loved Martha Stewart's Food magazines.

However, I found that I was flipping through the pages and encountering recipes I'll never use. My strong suggestion to anyone looking to purchase this book: Go to a book store and flip through it before you buy. Maybe the recipes will spark more of an interest for you than they did for me.

Otherwise, the book was beautiful with lovely pictures of the food. Just not my favorite.

This book is better suited for those who have a little more time ...

This book is better suited for those who have a little more time and money to spend, and fewer caloric needs. I have the budget for basic ingredients and not very much time to make something that although may be healthy, will leave me hungry. I guess I was looking for a cookbook that has healthy recipes with no-nonsense ingredients and reasonable prep time.

On the positive side, they are nice ideas, lovely pictures and would do for days off, but just not very realistic for someone who works, and needs time and energy for other things as well.

Move your healthy eating up a notch

Are you kidding? Anybody who underrated this book is a hack. These are the most "comforting" clean slate recipes using stuff I can find and use readily.anyone interested in a new take on your standard healthy recipes this book is amazing. Coconut oatmeal with sautéed nectarines, black quinoa with avocado, honey, and almonds...soba with salmon and watercress, quesadillas w/ collards and white beans... wow! Impressed. Yesbi have these ingredients, but I would have never come up with these recipes myself. This just busted me out of my bland healthy eating rut.

A great investment in your health and well being!

This book caught my eye while sitting on the top of a shelf at the library. After reading the narrative section and studying the meal plans, I decided I had to get a copy of my own. The book is beautifully constructed and well written. It has vibrant pictures that really showcase the food.

The book is divided into 3 main sections. The first part educates you about food. An easy read. It does not go into huge detail here. Some sections I found I wanted to learn more about. There's the Internet for that😊. It gives you enough pique interest and get started eating healthy.

The second section is your meal plan made from recipes in the book of course. It suggests two options to start; a 3 day detox and a 7 day detox. Then it gives 2 more weeks of meals designed to ease you into a healthy eating habit after that cleanse that slowly introduces you to various foods that are known to give many people negative reactions such as eggs and soy. The menu is designed so that you do most of your food prep in the first 3 days of the week and the other days meals are repeats. Great for busy parents like myself. And I was able to adapt the menu to fit the needs of my husband and kids.

Clean eating is a diet based on real food. Little to no processed foods. The recipes are super simple and most contain very few ingredients. Some of the ingredients can be difficult to find. Some are a bit costly. Being the middle of winter and recipes that are focused on fresh ingredients and are heavy in fruits and vegetables, I am finding that in spending quite a bit on those items. However; it is a diet low in meat. So there's cost savings there. The recipes are FANTASTIC! I am loving eating this way. I enjoy trying new recipes and new foods so it's a perfect fit. The dishes are flavorful and filling. There are some that I thought I wouldn't like because the flavor combos are different than I've seen before. It turns out I love those dishes!

I feel better than I have in a long time! No more bloating, I have energy, I'm sleeping better, even my adult acne is noticeably better!

I highly recommend this guide book to kick start healthier eating habits and a better you!
