Delicious and fast

I’m a new parent who also works. I used to love making more elaborate meals- no time for that now! I’ve tried many other cookbooks and websites which didn’t hit the right balance of deliciousness for the time that I have. It took a bit of effort to choose this book because my typical cookbook review websites (NPR, NYT) neglect this I-have-15-minutes-to-make-dinner category.
For those of us easing our culinary ambitions, this is a wonderful, wonderful landing point.
I’ve tried 3 recipes so far- chicken and couscous, primavera pasta, ginger scallion salmon. Each has been outstanding, and I am not scrambling to finish a recipe or cleaning dishes until I go to bed. It’s a big winner!

Just What I Needed

I received an ARC of this book to read through a review crew. All opinions are my own. Dinner Uncomplicated: Fixing a Delicious Meal Every Night of the Week by Claire Tansey is a book that arrived into my hands exactly when I needed it. Prior to March of 2020 my son and I seldom ate meals at home, I worked a lot of evenings and his busy schedule of school, work, and competitive sports meant we were almost never at home at the same time and when we were it just seemed easier to eat out or order in. Then came the lockdown and we were home for every meal. To make things easier for 3 meals a week we got a delivery service but that still left 4 dinners and 7 lunches for me to create mostly from what we had on hand because running out to pick up ingredients at the last minute simply was not happening and the quality of the meals he was preparing from the food service meant I needed to pick up my dinner game. Luckily I was asked to review this book and it has lots of easy and delicious meals to make from simple ingredients, with clear instructions. There are only two of us but the meals are easy to cut in half or make intentional leftovers for the next day or the freezer.
This book definitely has a place on my keeper shelf and the beautiful photographs and recipes grouped by the time it takes to makes them make it easy to find something to make when planning the week or when you have not planned anything at all but dinner needs to be on the table. Maybe for novice cooks with minimal pantries?”

I purchased on a whim because I saw the cheesy dutch baby recipe elsewhere and liked the simplicity and originality of it. It’s a good recipe, by the way. But almost all of the other recipes are so pared down and oversimplified that they are one-note, and that’s not delicious cooking. Whether you add one spice or three won’t add significant time to your food, but it will completely change the caliber of the result and add complexity, depth, color, and vibrancy. I think this would be a great first cookbook for anyone just learning to cook, but an experienced home cook won’t find much of interest. There are a few standouts, though, like the duck breast with grapes recipe, and the cheesy dutch baby with salad.

Great recipes!

I've really enjoyed cooking from this book. I also appreciate the way in which is is arranged. Everything I've made has been a winner and particularly on evenings when the day has gotten away from me, I have been able to put something together much more quickly than takeout. We have particularly enjoyed the Sticky Korean Beef and the Steak and Arugula Salad with Pesto Vinaigrette. The Cheesy Dutch Baby, however, has been on repeat and is my favorite recipe in the book. We've also really enjoyed many of the sides such as the Creamy Polenta, Crunchy Coleslaw and Garlicky Green Beans. I'm looking forward to continue working my way through this book.

The Most delicious potatoes EVER! We made a mouth watering "uncomplicated" dinner last night-Pork Tenderloin with Bacon and Potato. We threw everything together and then relaxed with a glass of wine while dinner cooked.
