Description

“Food blogger Gerard ( Half Baked Harvest Cookbook ) ably delivers on her promise ‘to make food that is delicious, usually healthy . . . and always satisfying’ in this excellent collection.” — Publishers Weekly (starred review) Tieghan Gerard is a food photographer, stylist, recipe developer, and author of the Half Baked Harvest Cookbook and Half Baked Harvest Super Simple , a New York Times bestseller. Her blog, Half Baked Harvest, features a hearty mix of savory, sweet, healthy, and indulgent recipes. She believes every diet should include a little bit of chocolate because balance is the key to life! Excerpt. © Reprinted by permission. All rights reserved. Introduction If you’ve been around for a while, you know I come from a big family. Crazy as it may be, my family recently grew, and I’m now one of EIGHT kids! My littlest brother, Oslo, arrived in 2020, and he is the greatest thing that came out of that whole year. While most of my siblings are scattered all over the place now, I’m still up in the mountains of Colorado. I live in a renovated log horse barn steps away from our separate studio barn, where I cook and shoot photos and generally stay busy. A lot of days, I’m on my feet all day cooking and testing new recipes. Other days, I race against the setting sun to get photographs of the finished dishes. And then there are the days I huddle in front of my pizza oven to keep cozy while catching up on emails and calls.I do all this with my family just next door, which I love. They LOVE food, always have, and they are what started my cooking and keep me cooking—if only because they are constantly hungry! My little sister, Asher, and my brothers (whenever they roll through town) are constantly popping into the studio looking for something to eat. Somehow, no matter how busy I am, I can’t resist stopping what I’m doing to make them their favorite foods—that’s just what you do for the people you love! But when my schedule overfills and stress sets in, taking care of myself is usually the first thing to go. And I bet the same is true for you. But it doesn’t have to be! No matter what else is going on, we all need to eat—every single day.xa0Food is, quite literally, fuel for life. So sometimes you need a quick sheet pan meal thrown together from whatever’s on hand, while other times you can leisurely enjoy both the cooking process and the meal. Sometimes you crave a clean, light, nutrientpacked dish, while other times you just want a big plate of something comforting. For me, the days are all different, but one thing is constant: I always want to be sure my loved ones and I are eating well.xa0 To me, “eating well” means not only sustaining your body but also giving yourself what you feel you need. I am definitely NOT an expert on any sort of healthy eating. What I have learned, though, is that I care about how food makes me feel, but I don’t want to spend a lot of time stressing about it. I want to know where my food came from, what’s in it, and who made it. I want to feel good about what I eat without sacrificing flavor or overcomplicating the process. And that’s the approach I take in my cooking every single day: I aim to make food that is delicious, usually healthy, sometimes decadent, and always satisfying. what “balance” means to me We’re always hearing about the importance of “balanced meals.” I don’t disagree, but if you’re looking for rules and regulations on health, I’m afraid you’re in the wrong place. I’m not a nutritionist, and I would never want to tell you how you “should” be eating. For me, feel-good food is not about caloriecounting or restriction. But it IS about lots of flavor and satisfaction. That means cooking with plenty of good fat, reducing sugar when possible—or using natural sweeteners like honey, dates, and maple syrup—and, most important, using non-processed ingredients that are whole and real. The other piece I feel is equally important is to give my body what it wants. Some days that’s a heaping plate of hearty, well-seasoned, yummy vegetables, and some days it’s a bowl of cheesy, buttery, gooey noodles. That’s what balance is for me. I set out to create a book that embodies the way I eat. I also wanted to give you guys more of what you’ve been asking for: the “healthy-ish” recipes I usually share on the blog at the start of each year. You—and I—want to eat those sorts of meals throughout the year, too, so I wanted to share more of them here. But my biggest hope is no matter what you’re looking for on any particular day, you will find something here that works for you. Whatever you’re feeling, that you can flip through the pages and find something super satisfying. And, of course, that some of these recipes will be on repeat in your kitchen! I’ve organized the recipes by types of meals and ingredients. Some dishes are lightened-up versions of old favorites. Others are heavy on superfoods. If you’re all about clean living, that’s here. And if you just NEED chocolate cake, that’s here, too. (Spoiler alert: it’s really good . . .) Whenever possible, I’ve indicated where you can make a choice of ingredients. There’s tons of flexibility here, and you should feel empowered to make the decision that works for you. I do a lot of cooking “research” on my family—some of my most popular recipes have come from Creighton’s insane imagination or whatever Red is craving. They are all picky in their own ways, and believe it or not, so am I. So it’s very important for my recipes to be flexible and fun. Maybe the way I prepared a dish isn’t exactly how you want to eat it that day—that’s okay! You can leave out the cheese, use gluten-free pasta, add in more greens, or do whatever else sounds good. I’ve also given multiple options for how to cook some things, especially when it comes to the slow cooker and pressure cooker, since I know we don’t all have them (but those of us who do LOVExa0them). Quantity over Quality?

I’m usually a pretty big HBH fan, but was a bit disappointed by the latest book.

Reason 1: I actually find this cookbook to be less healthy than the others. A decent amount of it is breaded or oven fried, which is also hard to re-heat and seems to be more for a special occasion than something you’d eat every day.

Reason 2: I have both other cookbooks and like them a lot, but I’ve found that Every Day has a lot of very similar recipes to the others. These similar recipes are technically different but they’re the same concept and not unique. I’m kind of surprised that more readers haven’t mentioned it in their reviews. I listed just a few examples below:

- Dark Mocha Lava Cakes (Every Day) vs. Molten Chocolate Cakes with Whipped Vanilla Mascarpone (original)
- Sheet Pan Meatball Pitas with Garlic Fries, Tzatziki, and the Works (Every Day) vs. Gyros with Roasted Garlic Tzatziki and Feta Fries (original)
- Red Wine-Braised Short Ribs with Whipped Provolone Cauliflower (Every Day) vs. Roasted Garlic and Tomato-Braised Lamb Shanks with Parmesan Mashers (original). The ingredient list for the meats is almost identical
- Paprika-Rubbed Rotisserie Chicken (Super Simple) vs. Slow Roasted Sunday Chicken (every day)

I understand that there are only so many ways to prepare chicken, beef, etc., so it’s totally understandable that every once in a while you’ll have similar recipes, but I think the crossover here is a little too much. I notice a lot of crossover on the blog as well. I think this is largely because it’s difficult to produce so much content for the blog, as well as three cookbooks in five-ish years. This book feels rushed compared to books by other authors who spend a ton of time perfecting every single recipe as its own. I think they just need to be spread out a lot more.

Disappointing, boring recipes, mostly vegetarian

I was eagerly waiting for its arrival, since I had pre-ordered it, based on the great recipes I had found in her Instagram page. However, in spite of the lovely cover and print quality, this cookbook has been a disappointment. Many of the recipes have been ‘recycled’ and done better by other authors. There are ingredients that are not readily available in most grocery stores, hence many of these recipes are not your ‘everyday’ type. Also, there are very few recipes that are somewhat interesting but nothing has the ‘wow’ factor. No pork recipes in the book, why? Most of the book is dedicated to vegetarian recipes, pizza/pasta and appetizers. Also, the book contains 27 pages of photos of the author (a bit too much for a cookbook??!!) Overall, a big disappointment. Wish I had looked at it before purchasing it, I would have NOT bought it.

Beautiful pictures, regurgitated recipes

I bought this book because I LOVE Tieghan's first two books, but unfortunately this one is being returned. It has beautiful photographs of the food (which is fantastic) and also lots of photos of her, most of which aren't relevant to cooking in the slightest and make Tieghan seem kinda self-absorbed. The recipes themselves really aren't that different than the ones from her first two books, just add bacon or burrata here or change a spice or two there. Regurgitated recipes aren't my thing, as I can just as easily add ingredients or switch spices to my liking. On top of all that, it almost seems like she's trying to mimic the Magnolia Farm vibe but not doing a great job at it. It's a stale and inauthentic vibe. This might be the cookbook for some people, but it's not for me.

Recipe labels are off.

So I normally go through all my cookbooks to write GF (gluten free) or DF (dairy free) on each recipe so I can easily find recipes for my allergy ridden family. I was SO EXCITED to see that Tiegan was including them in this book. But quickly it becomes obvious that the labels are not reliable.

For example: p39 Garlic Yogurt w poached eggs was labeled as DF, unexpected but so curious how she made it dairy free. She did not. There are no dairy free alternatives to the first ingredient, yogurt, in the recipe.

There are several more instances where this happens and it’s just like. It’s a disappointment when there’s a feature and it is done haphazardly and cannot be trusted.

HBH never disappoints!

I’ve followed Tieghan for a long time and have her previous two cookbooks too. Super Simple being my favorite, but this new one looks like it may be neck and neck with that one. No matter what recipes I make from HBH, whether from the website or the cookbooks, they always turn out delicious. Tieghan knows what she’s doing and never, ever skimps on flavor. Many people look to her for healthy meals and she offers plenty of those, but “healthy” is truly subjective in a society deeply rooted in diet culture. We’re smacked over the head daily to believe everything is going to harm us. It’s a wonder how we have any food left to eat at all since every ingredient is apparently poison at this point. It’s absurd really. I saw one review say that these new recipes are heavy and I’m baffled by this. In the very intro to this book Tieghan speaks about what healthy means to her and explains her thought process on ingredients and methods while writing her recipes. Truthfully if you’re looking for a diet cookbook then I’d really recommend other authors. There’s definitely no shortage of diets out there. However, if you’re looking to eat real, flavor packed food made from high quality ingredients then Half Baked Harvest is for you. My senses have awakened again in the kitchen since finding HBH as her food provides such a sensory experience with flavor and finding pleasure in eating again. My husband asks every time we’re planning our weekly meals what’s new from Tieghan and we are always delighted with whatever we choose to make.

Slightly disappointing...

I have been following HBH for years, both her blog and her insta, and love her recipes, however I found this book a little disappointing. A lot of the recipes are from her blog, and if I'm paying for the cookbook, then I would really like there to be all new recipes, not ones I've already seen/made. Also, and this is kind of not the most important, but she markets this book as "everyday" and "healthy", and a lot of these recipes are not exactly healthy at all. I'm a mom who loves to cook for kids, but I noticed her recipes are usually long and involved with multiple steps, sauces, pans, etc., which is totally fine, but it's not marketed appropriately or titled appropriately. I think the recipes look delicious and I want to give 3.5 stars, but the repeating of old recipes is kind of a bummer.

Great cookbook, but some aren't that inventive.

I like HBH and actively follow Tieghan on Instagram.
This is a great cookbook in general.. but the recipes start to feel repetitive. The salads and pastas didn't feel super differentiated from her site, or other cookbooks.
I know she's not a uber-health-focused recipe creator but there's so much cheese and pasta in these, along with uncommon ingredients. Not that those are bad foods - but it makes it more challenging for people.

Game Changer

Half Baked Harvest has changed my life.

Yes, this is a true statement. When my wife and I got married I was the one who cooked every meal. My wife had no interest and I had come to grips with the fact that I would cook for the rest of our lives. This was fine. Everything was fine.

THEN IT HAPPENED

She discovered the half baked harvest books. My life is changed. Not only have these books given my wife a new passion for cooking but I am eating better than restaurant quality food every single night. The book has everything. The food is delicious. Most importantly it is easy to follow and easy to manage. I am one happy camper and can't thank Tieghan enough.

Cover on upside down!

[[VIDEOID:9a714bf76ed480d85abd1ad2f1a1512e]] Upon opening book, I noticed that the pages are put in backwards and upside down. Is this a mistake with just my book or was the entire lot printed incorrectly?

I returned, the new book arrived perfect and I love it!

Overly heavy

I was so excited about this book, I pre-ordered, but after flipping through it, I am kind of disappointed. Everything looks overly heavy, almost like comfort food. Creamy sauces, pastas, breads and etc. But I guess pasta image on the cover gives it away. Nevertheless, it looks flavorful and delicious.
