I picked this book because I was very interested in trying to understand how to run a business.

I've working in a restaurant before and I saw all facets of fast food, but I'd never worked in other types of restaurant.

I loved the various ways they showed how to run different restaurants, yet made it simple enough to understand how to do everything generally.

The tips and sidebars were great and easy to understand as well. Love this book! Definitely didn't feel like a dummy when i was done.

Should be titled "Purchasing and Designing Your Own Restaurant"

I was disappointed in this book because I wanted a book about managing (running) a restaurant. I was not interested in how to identify and purchase the ideal property for a new restaurant or how to design the interior of my new restaurant. Less than 1/3 of this book actually deals with management issues in any restaurant.

Here we Go!

My wife and I are contemplating opening a food establishment. It won't necessarily be a restaurant but it will have many of the same properties. We will sell food and drink, we will have to manage the market orders, financials, keep the place clean and compliant with the local food codes. We will no doubt have to confront difficult challenges along the way to making it a success.

So this book seemed like a good idea - find out about the basics of restaurant business, what kind of place to run. Then we have to research the marketplace - are we going to be able to succeed? In order to get funding we need to write a business plan. It's all about money!

Then we need to find financing. Investors? Banks? Friends (?)

Then LOCATION LOCATION LOCATION! Where do we set up? What about Security? What about the other businesses in the area?

And of course, what kind of company do we set up? Corporate? LLC? Partnership? Sole Proprietorship?. And of course the licenses, health codes, building codes, fire codes, other permits and Trademarks! Insurance!

Designing the front and back of the restaurant - a facade and the hardware! Hiring staff, training, advertising!

Lots to do! This book covers that and more!

Fun and informative

I live in Tokyo, a city that has over 200,000 restaurants and more Michelin stars than any other city in the world. I have never worked in a restaurant but I love eating in them.

I have no idea if this book could in fact help me start and run my own establishment. It can't hurt, but I am realistic and since nowhere is more competitive than Tokyo, I won't learn much just by reading a book.

If nothing else though, Running A Restaurant For Dummies is a fun and informative look at how a restaurant is in fact operated. It's at least a great "how it's done" book, as opposed to being a "how to do it" book.

There's a lot of practical information here. How to price items on your menu, how to decide a theme for your operations, how to schedule your staff, how to design your kitchen, what temperatures to avoid when storing food, etc.

One thing that amused me, coming from a financial industry background, is that in banks we talk of front office and back office operations. Front office staff talk to clients, bring in revenue, and make money while back office staff do the support work with accounting, operations, computers, etc.

The restaurant business thinks the same way: the places customers can access, i.e. the areas that bring in the money, are called the front of the house, while the support areas, including the kitchen and the pantry, are called the back of the house.

A really fun book even if you don't want to open your own restaurant.

Great Guide

Really informative guide covering the opening and running of a restaurant. Not only does it cover the business side as far as laws, accounting and organization. It also covers the nuts and bolts of actually running a restaurant effectively. This is one of the better Dummies guides.
