Perhaps a nouveaux flash-in-the-pan, but a good case is made for an ancient yummy 'waste not want not'. Besides being totally easy to make and a very versatile element for an international as well as a back-country kitchen, bone broth is especially loaded with vital nutrients.Anane Resnick lays the information out in a readable and entertaining way.I have taken up the habit of buying the"dog bones from my locally raised and butchered beef cows and am grateful the broth movement hasn't bumped the prices out here in the valley. Resnick gives a thorough methodology in preparation, and I am glad I bought the book.
