It's a cookbook.

It's full of recipes and wine pairings and very scant on butchery.
This book assumes you know all animal anatomy and how to cut meat already.
Provides much of the same, repetitive information for each animal which truly just isn't very helpful. So vague and generalized and hardly specific to anything.
It's mostly full of lovely photos of wine and farm animals in serene landscapes.

Great but maybe not for beginners

This book give great explanation and full detail. Unfortunately I don't think it's the best for beginners. There are a lot of items we had to Google. As a beginner you may not know what the specific details related to so we had to research more while using this as a guide. Still very informative with great information. This book assumes you have common knowledge which I don't think most beginners may have.

Not worth the time...

I purchased the book hoping for some details in actually butchering. What I found was the minimal explanation of preparing with no anatomical diagrams showing exactly how and where to make each cut depending on the cut of meat you would like. It's as if the writer expected us to already know the details of how to hang, skin and cut each type of meat so didn't bother putting in any pictures. They spent more time putting recipes in than they did about explaining how to perform particular cuts of meat from the carcass...

Almost useless as a butchering book, makes a better cookbook than anything

There is no images that you can use as a guide for the butchering process, there is only 3 to 4 pages of butchering information and most of it is of little value. The rest of the book is dedicated to recipes. If your looking for butchering information this just isn’t the book for you. If your looking for recipes there is value in this book.
