Written from a utopian point of view, some of the recipes and technical components are helpful

I waited for about 3 years to purchase this book, and now I know why I did. It's not the most well-written book I have ever purchased. Some technical aspects are left unexplained.

The background about pickling and utilizing components to keep the ingredients firm are helpful for sure. I appreciate the discussion about vinegars. The section about how to determine the percentage acid content in the vinegar was a little bit too advanced for most readers.

The author lives in the Willamette Valley in Oregon and expresses their ideological point of view often which is based on geographical setting. I would have appreciated an alternative means of acquiring grape or cherry leaves since I don't necessarily live where grape vines are that abundant.

No Pictures!

The book has some interesting historical tidbits; however, there aren't really any outstanding different pickling recipes. The recipes are very basic and can easily be found elsewhere.

My big disappointment in this book was there were no pictures, none whatsoever. I think it was a huge missed opportunity for the author. And the book was not cheap.

I would have returned it but it was a gift. Ugh.

You are going to have long and hard to find the info in her books !!

this is an excellent book to have! the print could have been larger, and the quality of the paper could have been better also, but the content was excellent! the author is very down to earth, and my compliments to the author ! if her other book, the joy of jams, jellies and other sweets with 200 recipes is anything like this book with 300 recipes, im sure this is a set of books to have, and I did buy both. I just haven't put down this one yet to read the other one!!

high volume recipes

It's a great book but not for me. All the recipes are for a very high volume. That would be great if I owned a store or restaurant or deli, but I don't.

It's a book that I consulted tonnes of times borrowing it from friends or a the library for the past few years since when I started canning. It's easy and filled with recipes from different countries for a large variety of tastes. Definitely it's more than worthy having it at home, always available when inspiration and right ingredients are there for "the joy of pickling" :)

This is a wonderful book. I lent my 1st edition to somebody and could not remember who so when pickle season came around I felt the need for my favorite pickling book. There are quite a few more recipes in this edition. Definitely a comfort to have this amazing resource at my disposal.

Very Helpful!

I've only tried one recipe from this book - the apfelkraut - and it's delicious! This book gives very good instructions for all sorts of recipes. I plan on doing the Full Sour pickles, very soon.
